I’ve Got Blue Potatoes

I first encountered one when presented with pomme de terre en deux colours with a delicious lunch served in the square in front of an excellent restaurant in Vence. Now I’m happy to find they’re a regular feature of the Lewes Farmers’ Market.

    Some of the chemistry students dyed mashed potato blue as part of a psychology/chemistry/cookery collaboration… But they needn’t have, this is 100% natural.

    However, a quick google seems to indicate you’re not alone in your aversion to blue food – see H2G2. They say it is to do with a blue/alkaline association – I’d be more likely to guess mould, which is, after all part of the weird deliciousness of blue cheese (something I feel they should not have ranked below Bridget Jones’ soup).
