I first encountered one when presented with pomme de terre en deux colours with a delicious lunch served in the square in front of an excellent restaurant in Vence. Now I’m happy to find they’re a regular feature of the Lewes Farmers’ Market.

I’m sure that if Benny Hill were still alive, there’d be a joke here about King Edwards turning blue or something…
That looks just… wrong. Blue food????
Come and say hello when you’re next on campus?
Some of the chemistry students dyed mashed potato blue as part of a psychology/chemistry/cookery collaboration… But they needn’t have, this is 100% natural.
However, a quick google seems to indicate you’re not alone in your aversion to blue food – see H2G2. They say it is to do with a blue/alkaline association – I’d be more likely to guess mould, which is, after all part of the weird deliciousness of blue cheese (something I feel they should not have ranked below Bridget Jones’ soup).
I’ve emailed you about visiting you on campus!
